Chickpea and roast veg salad - serves 4

Inspired by Deliciously Ella


ingredients:

2 cauliflowers - cut into medium sized florets

2 x 400g tins of chickpeas

1-2 avocados

few handfuls of rocket

handful of chopped coriander

4 tsps ground cumin

drizzle of oil

salt and pepper

we also added:

4 courgettes

2 onions


method:

1. preheat oven to 180-200 degrees fan


2. place the cauliflower florets (and other veg you want to roast) in a large baking tray with a drizzle of olive oil, salt, pepper and the cumin


3. roast for 25 mins before adding the chickpeas and roasting for a further 10 mins


4. once cooked remove from oven and leave to cool


5. once cooled mix everything together with the rocket and avocado chunks


6. serve up, drizzle with olive oil, sprinkle of coriander, (we also added some spring onions), salt and pepper and enjoy!!
